Turbulent Times for Triad Restaurateurs

Over the past 18 months, more than a dozen local eateries have shuttered their doors amid one of the worst recessions in American history. Among them are Ombu and Christopher's Global Cuisine in Winston-Salem, and Bert's Seafood Grille and Sweet Basil's in Greensboro.

To be a successful restaurateur in today's market means meeting enormous startup and capital costs (often without bank support), working long irregular hours, acquiring skilled employees, and a slew of intangibles such as striking the right ambience, accurately calculating exactly what customers want, and actually making a profit amid skyrocketing food costs.   

Contributor to the Business Journal and Director of the Journalism Program at Wake Forest University Justin Catanoso surveys the turbulent restaurant market in the Triad, points out the winners and losers, and what it takes (beyond location, location, location) to survive in today's competitive food market.
